Zasavica in a village in Serbia. Serbia lies in the Balkan peninsula between Central and Southern Europe. An ex-MP and conservationist by the name of Slobodan Simić created his farm in Zasavica over 20 years ago. He transformed wetlands into a nature reserve in 1997. A few years later he took on the task of taking in rescue donkeys. Many of these donkeys had been beaten and were not well cared for. Simić returned them back to good health and now has over 180 donkeys.

Balkan donkeys do not yield a great deal of milk, but it is extremely nutritious, believed to help with immunity from disease and slow down the aging process.

After some experimentation, and combining the donkey milk with goat milk, along with his neighbors, he was able to produce small amounts of a sweet tasting cheese. It is said to be the most expensive cheese in the world at about $500 per pound. And there’s another catch—you can only get it in Serbia.
